He starts his career in Lima, his hometown, studying and working in La Rosa Naùtica and in Cevicherìa Punta Sal. Some time later he leaves for Iquitos, in the Amazons. There he learns about new cuisine techniques and gets familiar with many peculiar products only found in that part of the planet.

Curious as all chefs are, he works in countries like Colombia or Panama like executive chef in important restaurants where he ends up creating his own Peruvian styled cuisine.

Nowadays, Diego works as a gastronomy consultant and owns “La Rosticerìa”, a very cozy restaurant in Bogota where you can enjoy delicious Peruvian street food.

If you live in the Colombian capital or just happen to visit it or go there for business, I would highly recommend you to make a stop at “La Rosticerìa”.
